Crazy Tony's grilled Congo thighs
8 skinless chicken thighs
2 brown congo peppers (chopped and seeded) 2 oz. soy sauce 2 oz. amber rum (I prefer Brugal Anejo, it's not a bad idea to add some directly to your stomach while your at it!) 1/2 tsp. oregano 1/2 tsp rosemary 1/2 tsp French thyme (can sub. w/ parsley) Put all ingredients in large plastic bag, marinate 2-5 hrs. preheat grill to med high, grill 25-30 min, turning once halfway through. serve with spinach or collards.
